Here’s my cider. Just siphoned it out of the fermentation jug and off the yeast sediment. I put it into two 2-liter BPA-free seltzer water bottles, adding a half a cup more apple juice to each. This will reignite fermentation, plus add a slightly sweet character. I want fermentation to reignite to bottle condition and carbonate. You can see a little fizz already forming. I have them at standard room temp now, circa 70 degrees. Once the bottles become as hard as when they had seltzer water in them (yuck, by the way), I will refrigerate. Three or four days in the fridge would be best, but I highly doubt I can wait that long. Probably drink them Sunday. I tasted it when I siphoned and it was nice and tart. Carbonation will round this tartness out, making it more 3-dimensional, and the extra apple juice added should provide a slight sweetness to balance it.
Although, I’m not sure, it seems surprisingly alcoholic, possibly in the 7% range (I was shooting for ~5%).
Anywho, next I’m going to make Graf, a fictional drink invented by Stephen King in the Dark Tower series.
